Chocolate Rye Cookies Recipe.

Ingredients.

  • 100g rye flour
  • 25g unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 150g dark chocolate (70% cocoa), melted
  • 60g unsalted butter, melted
  • 2 large eggs
  • 150g brown sugar
  • 1 teaspoon vanilla extract
  • Flaky sea salt (for finishing)

How to Make This.

  1. Melt Chocolate and Butter: Melt the dark chocolate and butter together in a heatproof bowl over a pan of simmering water (or in the microwave in 30-second bursts). Let it cool slightly.
  2. Whisk Eggs and Sugar: In a large bowl, whisk the eggs and brown sugar together for at least 5 minutes until the mixture is very pale and doubled in volume. This creates the “cracked” top.
  3. Combine: Whisk the melted chocolate mixture and vanilla into the egg mixture.
  4. Add Dry Ingredients: Sift in the rye flour, cocoa powder, baking powder, and salt. Fold gently until just combined. The batter will be quite soft.
  5. Chill: Refrigerate the batter for 30 minutes to firm up.
  6. Bake: Preheat oven to 180°C (350°F). Scoop rounded tablespoons of batter onto a parchment-lined sheet.
  7. Finish: Bake for 10-12 minutes until the edges are set and the tops are beautifully cracked. Sprinkle with flaky sea salt immediately.

Tips.

  • Whisking is Key: Don’t skimp on the 5-minute egg and sugar whisking; it’s what gives the cookies their signature shiny, cracked surface.
  • Rye Flour: Rye flour has less gluten than wheat, which contributes to the incredibly soft, fudgy texture.
  • Don’t Overbake: These cookies should still feel a bit soft when you take them out; they will firm up as they cool.
