Ingredients.

  • 2 cups fresh or frozen cranberries
  • 1 cup pomegranate juice (100%, not cocktail blend)
  • 2 cups water
  • ¼ cup dried hibiscus flowers (or 4 hibiscus tea bags)
  • 1 cup granulated sugar
  • 1 tbsp orange zest
  • 2 tbsp fresh orange juice
  • Pinch of salt
  • Fresh pomegranate arils, for garnish

How to make the Cranberry Hibiscus Sorbet.

  1. Steep the Hibiscus: Bring the water to a boil, then remove from heat and steep the dried hibiscus flowers (or tea bags) for 8–10 minutes, until deeply colored and fragrant. Strain and discard the solids, reserving the liquid.
  2. Cook the Cranberries: Return the hibiscus tea to the saucepan, add the cranberries, pomegranate juice, and sugar, and bring to a simmer over medium heat. Cook for 8–10 minutes, stirring occasionally, until the cranberries soften and begin to burst.
  3. Blend: Remove from heat and let cool slightly. Pour the mixture into a blender and purée until completely smooth.
  4. Strain: Pass the purée through a fine-mesh sieve, pressing with the back of a spoon to extract as much liquid as possible while removing the skins and seeds. This step is what gives the finished cranberry hibiscus sorbet its silky, jewel-toned finish.
  5. Add the Citrus: Stir in the orange zest, orange juice, and a pinch of salt to balance the tartness and round out the pomegranate’s natural sweetness.
  6. Chill: Cover and refrigerate the mixture for at least 4 hours, or until fully cold.
  7. Churn: Pour the chilled base into an ice cream maker and churn according to manufacturer instructions, about 20–25 minutes, until thick and slushy.
  8. Freeze: Transfer to a freezer-safe container and freeze for at least 4 hours, or until firm enough to scoop.

Tips for the Cranberry Hibiscus Sorbet.

  • For a no-churn version, freeze the strained mixture in a shallow dish, scraping and stirring with a fork every 30–45 minutes until fully frozen and fluffy.
  • If you want extra floral intensity, steep the hibiscus a few minutes longer; just taste as you go, since it can turn tannic if oversteeped.
  • Fresh pomegranate arils hold their pop and crunch even after freezing briefly on top, so add them just before serving rather than folding them into the base.
