- 1 teaspoon salt
- 2 tablespoons unsweetened cocoa powder
- 1 ½ cups granulated sugar
- 1 cup vegetable oil (or melted unsalted butter)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 2 tablespoons red food coloring (liquid or gel)
- 1 teaspoon white vinegar
For the Frosting.
- 8 ounces (226g) cream cheese, softened
- ½ cup (1 stick) unsalted butter, softened
- 4 cups powdered sugar, sifted
- 1 teaspoon vanilla extract
- 1-2 tablespoons milk or heavy cream (if needed for consistency)
How to Make This.
- Prepare Oven and Pans: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or a 9×13 inch baking pan. Line the bottoms with parchment paper if using round pans.
- Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, salt, and cocoa powder. Set aside.
- Combine Wet Ingredients: In a large bowl, whisk together the granulated sugar, vegetable oil (or melted butter), eggs, and vanilla extract until well combined.
- Add Color and Buttermilk: In a separate small bowl, combine the buttermilk, red food coloring, and white vinegar. Gradually add this mixture to the wet ingredients, alternating with the dry ingredients, beginning and ending with the dry ingredients. Mix on low speed until just combined. Do not overmix.
- Bake the Cake: Divide the batter evenly between the prepared pans. Bake for 25-30 minutes for round pans, or 30-35 minutes for a 9×13 inch pan, or until a wooden skewer inserted into the center comes out clean. (Baking time may vary, so check for doneness).
- Cool: Let the cakes cool in the pans for 10-15 minutes before inverting them onto a wire rack to cool completely. Ensure cakes are completely cool before frosting.
- Make Cream Cheese Frosting: In a large bowl, beat the softened cream cheese and butter together with an electric mixer until smooth and creamy. Gradually add the sifted powdered sugar, beating until light and fluffy. Beat in the vanilla extract. If the frosting is too thick, add milk or cream one tablespoon at a time until desired consistency is reached.
- Frost the Cake: Once the cakes are completely cool, frost generously with the cream cheese frosting. Decorate with cake crumbs or chocolate shavings if desired.

Don’t Overmix: Overmixing the batter can lead to a tough cake. Mix until just combined.
Room Temperature Ingredients: Ensure eggs, butter, and cream cheese are at room temperature for a smoother batter and frosting.
