Creamy Mushroom Chicken Recipe

- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 tbsp butter
- 8 oz cremini mushrooms, sliced
- 1/2 red bell pepper, diced
- 1/2 green bell pepper, diced
- 1/2 yellow onion, finely chopped
- 3 cloves garlic, minced
- 1/2 cup chicken broth (low sodium)
- 1/2 cup heavy cream
- 2 tbsp cream cheese, softened
- 1 tbsp fresh parsley, chopped, plus more for garnish
- 1 tbsp fresh chives, chopped, plus more for garnish
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried thyme
- 1/4 tsp cayenne pepper (optional, for a subtle kick)
- Salt and freshly ground black pepper to taste
- 1/4 cup frozen peas (for color and sweetness)
- 1/4 cup sun-dried tomatoes, chopped (optional, for color and umami)
How to Make This.
Stovetop Method:
- Season Chicken: Pat chicken pieces dry. In a medium bowl, toss chicken with 1/2 tsp salt, 1/4 tsp black pepper, smoked paprika, garlic powder, onion powder, dried thyme, and cayenne pepper (if using).
- Cook Chicken: Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add seasoned chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Sauté Vegetables: Add butter to the same skillet. Add sliced mushrooms, diced red and green bell peppers, and chopped onion. Sauté until vegetables are softened and mushrooms are golden, about 7-10 minutes. Add minced garlic and cook for 1 minute until fragrant.
- Build Cream Sauce: Pour in chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer. Reduce heat to medium-low. Stir in heavy cream and softened cream cheese until smooth and well combined. Add chopped fresh parsley and chives. Season with additional salt and pepper to taste.
- Combine & Simmer: Return cooked chicken to the skillet. Stir in frozen peas and chopped sun-dried tomatoes (if using). Simmer gently for 3-5 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- Serve: Garnish generously with fresh chopped parsley and chives. Serve immediately.

- Build Cream Sauce: Pour in chicken broth, scraping up any browned bits. Reduce temperature to 250°F (120°C) or a gentle simmer setting. Stir in heavy cream and softened cream cheese until smooth and well combined. Add chopped fresh parsley and chives. Season with additional salt and pepper to taste.
- Combine & Simmer: Return cooked chicken to the skillet. Stir in frozen peas and chopped sun-dried tomatoes (if using). Simmer gently for 3-5 minutes, allowing the flavors to meld and the sauce to thicken slightly.
